- Cooked rice (day-old)4 cups
- Pork belly200g
- Small shrimp100g
- Fish sauce1/3 cup
- Sugar3 tbsp
- Water1/4 cup
- Garlic2 cloves
- Vegetable oil1 tbsp
- Salt1/2 tsp
- Black pepper1/2 tsp
- Green onionsfor garnish

Press the cooked rice firmly into a greased baking dish. Fry in a skillet with a little oil until golden and crispy, or use an air fryer. Drain on paper towels.

Cut pork belly into small pieces. Mince garlic.

In a saucepan, combine fish sauce, sugar, and water. Stir to dissolve sugar. Add minced garlic.

Add pork belly to the sauce. Simmer over medium heat for about 15 minutes until pork is tender and sauce thickens slightly.

Add shrimp and cook for 5 minutes until done. Season with salt and pepper. The sauce should be savory and slightly thick.

Serve the crispy rice cakes with the Kho Quẹt sauce. Garnish with chopped green onions.
