A flavorful variation of Char Siu, using pork ribs instead of a solid cut. The ribs are marinated in the classic Char Siu sauce and then roasted or grilled until tender and sticky.

- Pork ribs (spare ribs or baby back)1.5 kg
- Honey4 tbsp
- Soy sauce4 tbsp
- Hoisin sauce3 tbsp
- Rice vinegar2 tbsp
- Five-spice powder1 tsp
- Garlic, minced4 cloves
- Ginger, grated1 tbsp
- Red food coloring (optional)1/4 tsp
- Salt1 tsp
- Black pepper1/2 tsp
- Water2 tbsp

Cut pork ribs into individual ribs or small sections.

In a large bowl, combine honey, soy sauce, hoisin sauce, rice vinegar, five-spice powder, minced garlic, grated ginger, red food coloring (if using), salt, pepper, and water. Whisk until well combined.

Add the pork ribs to the marinade and toss to ensure each piece is thoroughly coated. Marinate for at least 4 hours, or preferably overnight in the refrigerator.

Preheat oven to 190°C (375°F).

Arrange the marinated ribs in a single layer on a baking rack set over a baking sheet.

Roast for 30 minutes.

Reduce oven temperature to 175°C (350°F). Brush the ribs with remaining marinade. Continue roasting for another 30-45 minutes, basting every 15 minutes, until the ribs are tender, sticky, and caramelized.
