- Pork knuckle, cut into cubes800g
- Coconut water400 ml
- Fish sauce2 tbsp
- Brown sugar1 tbsp
- Garlic, minced2 cloves
- Ginger, minced1 tsp
- Black peppercorns, crushed0.5 tsp
- Salt0.5 tsp

Rinse the cubed pork knuckles and pat dry.

In a pot, combine pork, coconut water, fish sauce, brown sugar, minced garlic, minced ginger, and crushed black peppercorns.

Add enough plain water to just cover the pork.

Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until pork is tender.

Uncover and simmer for another 10-15 minutes to allow the sauce to thicken.
