- Beef stew meat, cut into 1-inch cubes700 g
- Ground green peppercorns2 tbsp
- Lemongrass paste1 tbsp
- Garlic, minced3 cloves
- Shallots, minced1
- Fish sauce2 tbsp
- Sugar1 tsp
- Beef broth750 ml
- Vegetable oil1 tbsp
- Saltto taste
- Black pepperto taste
- Green onions, chopped, for garnisha few

Season beef cubes with salt and black pepper.

Heat oil in a pot over medium-high heat. Brown the beef cubes. Remove and set aside.

Sauté minced shallots and garlic until softened.

Add ground green peppercorns and lemongrass paste, sauté for 30 seconds until fragrant.

Return beef to the pot. Add fish sauce, sugar, and beef broth. Bring to a boil.

Reduce heat, cover, and simmer for 1 to 1.5 hours, or until beef is tender.

Adjust seasoning with salt and pepper.
