- Carp1 kg
- Pickled mustard greens (dưa cải muối)300g
- Galangal30g
- Ginger30g
- Shallots2 bulbs
- Fish sauce3 tbsp
- Sugar1 tsp
- Chili peppers1-2
- Fresh dill50g
- Water200 ml
- Saltto taste
- Black pepperto taste
- Cooking oil2 tbsp

Clean and cut the carp into thick pieces. Marinate with salt and pepper.

Thinly slice galangal and ginger. Finely chop shallots. Slice chili peppers.

Wash and chop pickled mustard greens.

Heat oil in a pot. Sauté shallots until fragrant, then add galangal and ginger. Cook for 2 minutes.

Add carp pieces and sear lightly on both sides.

Add pickled mustard greens and chili peppers. Stir well.

Pour in water, fish sauce, and sugar. Bring to a boil.

Reduce heat, cover, and simmer for 30-40 minutes until fish is tender. Stir in most of the fresh dill during the last 5 minutes of cooking.

Season with salt and pepper to taste. Garnish with remaining fresh dill.
