- Jumbo shrimp, peeled and deveined1.5 lbs
- Rice flour1/4 cup
- Salt1.5 tsp
- Black pepper1 tsp
- Garlic, minced3 cloves
- Lime zest1 tsp
- Lime juice1 tbsp
- Vegetable oil, for frying1/2 cup
- Cilantro, chopped (for garnish)1/4 cup

Pat the shrimp dry. In a bowl, toss shrimp with rice flour until lightly coated.

In a small bowl, combine 1 tsp salt, 1/2 tsp black pepper, minced garlic, lime zest, and lime juice.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Fry shrimp in batches until golden and cooked through. Remove and drain.

Drain excess oil, leaving about 1 tablespoon. Add the salt, pepper, garlic, lime zest, and lime juice mixture to the wok. Stir fry for 30 seconds until fragrant.

Return shrimp to the wok. Add remaining 1/2 tsp salt and 1/2 tsp pepper. Toss well to coat. Cook for 1 minute.
