Cut chicken thighs into 1.5-inch pieces. Season with salt and pepper.

In a bowl, whisk eggs. In a separate bowl, combine cornstarch and rice flour.

Dip chicken pieces in egg, then dredge thoroughly in the cornstarch-rice flour mixture, ensuring a thick coating.

Heat vegetable oil in a wok or deep fryer to 180°C (350°F). Fry chicken in batches until deeply golden brown and very crispy. Drain on a wire rack.
