- Lamb shoulder1.2 kg
- Lamb mince200 g
- Breadcrumbs150 g
- Onion1 medium
- Garlic3 cloves
- Fresh parsley1/2 cup, chopped
- Fresh dill1/4 cup, chopped
- Egg1
- Olive oil2 tbsp
- Saltto taste
- Black pepperto taste
- Lamb or beef broth150 ml

Preheat oven to 160°C (325°F).

Prepare the stuffing: Sauté finely chopped onion and minced garlic in olive oil until softened. In a bowl, combine lamb mince, breadcrumbs, sautéed onion and garlic, chopped parsley and dill, egg, salt, and pepper. Mix well.

Prepare the lamb shoulder: If necessary, trim excess fat. Create a pocket or cut a slit into the thickest part of the lamb shoulder to insert the stuffing.

Stuff the lamb shoulder with the prepared mixture. Secure with kitchen twine if needed.

Season the outside of the lamb shoulder with salt and pepper.

Place the stuffed lamb shoulder in a roasting pan. Pour the broth into the bottom of the pan.

Roast for approximately 2.5 to 3 hours, basting occasionally with the pan juices, until the lamb is tender and cooked through.

Increase oven temperature to 200°C (400°F) for the last 15-20 minutes to brown the exterior.

Let the roast rest for 15-20 minutes before carving. Serve slices of lamb with the herb stuffing.
