Preheat oven to 180°C (350°F).

Prepare the lamb shoulder: Score the skin of the lamb shoulder. Rub generously with salt, black pepper, minced garlic, and olive oil. Tuck rosemary and thyme sprigs into the scores.

Roast the lamb: Place the lamb shoulder in a roasting pan. Roast for approximately 2.5 to 3 hours, or until the internal temperature reaches 75°C (167°F).

Baste: Baste the lamb with its own juices every 30 minutes.

Rest and serve: Let the lamb rest for 15-20 minutes before carving. Drizzle with lemon juice and serve.
