Ingredients

  • Spring roll wrappers30 sheets
  • Cabbage, thinly sliced2 cups
  • Carrots, julienned1 cup
  • Green beans, cut into 1-inch pieces1 cup
  • Bean sprouts1 cup
  • Garlic, minced2 cloves
  • Soy sauce2 tbsp
  • Sesame oil1 tsp
  • Salt1/2 tsp
  • Black pepper1/4 tsp
  • Vegetable oil, for stir-frying and frying3 cups

Steps

    Heat 1 tbsp of vegetable oil in a wok or large skillet over medium-high heat. Sauté garlic until fragrant.

    Add cabbage, carrots, and green beans. Stir-fry for 3-5 minutes until vegetables are tender-crisp.

    Add bean sprouts, soy sauce, sesame oil, salt, and pepper. Stir-fry for another minute. Remove from heat and let cool slightly.

    Assemble the lumpia by placing about 2-3 tablespoons of the vegetable filling on a wrapper, folding the sides, and rolling tightly. Seal with water.

    Heat vegetable oil for frying over medium-high heat. Fry the lumpia in batches until golden brown and crispy, about 5-7 minutes.
