Ingredients
- Chicken thighs1.5 kg
- Soy sauce1 cup
- White vinegar1/2 cup
- Garlic1 head, cloves separated
- Whole black peppercorns1 tablespoon
- Bay leaves3
- Water1/2 cup
- Vegetable oil2 tablespoons
- Sugar1 tablespoon (optional)

In a large bowl, combine chicken pieces, soy sauce, vinegar, garlic cloves, black peppercorns, and bay leaves. Marinate for at least 30 minutes, or preferably 1-2 hours in the refrigerator.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Remove chicken from marinade (reserve marinade) and sear chicken pieces until browned on all sides. Work in batches if necessary.

Pour the reserved marinade into the pot with the chicken. Add water and sugar (if using). Bring to a boil.

Reduce heat to low, cover, and simmer for 30-40 minutes, or until chicken is tender and cooked through. Stir occasionally.

Uncover and increase heat to medium-high. Simmer for another 10-15 minutes to reduce the sauce to your desired consistency. Taste and adjust seasoning with salt and pepper if needed.

Remove bay leaves before serving. Serve hot, traditionally with steamed white rice.
