Slice chicken thighs thinly against the grain.

In a bowl, combine chicken, soy sauce, calamansi juice, minced garlic, and black pepper. Marinate for at least 30 minutes.

Heat vegetable oil in a pan over medium-high heat. Add sliced onions and cook until deeply caramelized and slightly crispy. Remove onions from the pan and set aside.

Add marinated chicken (reserving marinade) to the same pan. Sear chicken until lightly browned on all sides.

Pour in the reserved marinade and water. Bring to a simmer, then reduce heat, cover, and cook for 15-20 minutes, or until chicken is tender and cooked through.

Uncover and simmer for a few more minutes to thicken the sauce if needed. Season with salt to taste.
