    Thinly slice the onions and place them in a bowl. Add salt and mix well. Let them sit for 5-10 minutes to release their moisture.

The mixture should be thick and hold the onions together; add a tablespoon or two of water only if absolutely necessary to bind.

    Heat oil in a deep pan or kadai over medium-high heat for deep frying.
