Bring to a boil on the stove, then reduce heat to low, cover, and simmer for 45-60 minutes, or until very tender. If using a pressure cooker, cook according to manufacturer's instructions (typically 15-20 minutes after reaching pressure).

Drain most of the cooking liquid, reserving about 1/2 cup. Mash the beans with a fork or potato masher directly in the pot to your desired consistency. Some prefer them chunky, others smoother.
