Horchata de Chufa (Valencian Style)

Traditional dish · Spanish

A traditional Valencian drink made from tiger nuts (chufas), offering a distinctively nutty and slightly sweeter flavor profile compared to Mexican horchata.

Ingredients

Servings4
  • Tiger nuts (chufas)1 cup
  • Water4 cups
  • Sugar1/2 cup
  • Lemon zest1 strip
  • Cinnamon stick1

Steps

  1. 1

    Rinse the tiger nuts thoroughly.

  2. 2

Soak the tiger nuts in 4 cups of water with the lemon zest and cinnamon stick for at least 6 hours, or overnight.

  3. 3

Drain the tiger nuts, reserving the soaking liquid. Discard the lemon zest and cinnamon stick.

  4. 4

Place the soaked tiger nuts in a blender with about 2 cups of the reserved soaking liquid. Blend until very smooth.

  5. 5

Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher, pressing well to extract all the liquid. Discard the pulp.

  6. 6

Add the remaining soaking liquid and sugar to the pitcher. Stir until the sugar is dissolved.

  7. 7

Chill thoroughly in the refrigerator for at least 1 hour.

  8. 8

    Serve cold over ice.
