- Ripe mango1 large

Rinse the glutinous rice under cold water until the water runs clear. Drain well.

Place the rinsed rice in a microwave-safe bowl. Add 1/2 cup of water. Cover with a microwave-safe lid or plate and microwave on high for 8-10 minutes, or until the water is absorbed and the rice is tender. Let stand for 5 minutes.

While the rice is cooking, gently warm the coconut milk in a separate microwave-safe bowl (about 30 seconds). Stir in the sweetener and salt until dissolved. Do not boil.

Pour about half of the sweetened coconut milk over the cooked rice. Stir gently to combine. Cover and let it sit for 5-10 minutes to allow the rice to absorb the liquid.
