- Beef (stewing cuts, cubed)700 g
- Thick coconut milk400 ml
- Rendang paste (store-bought)4 tbsp
- Lemongrass, bruised1 stalk
- Kaffir lime leaves3 leaves
- Tamarind paste1 tbsp
- Saltto taste
- Water200 ml
- Vegetable oil2 tbsp

Heat vegetable oil in a pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides.

Add the rendang paste and cook for 1-2 minutes until fragrant.

Pour in the thick coconut milk, water, bruised lemongrass, and kaffir lime leaves. Stir well to combine.

Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the beef is tender.

Stir in the tamarind paste. Continue to simmer uncovered for another 10-15 minutes to allow the sauce to thicken slightly.

Season with salt to taste. Remove lemongrass and kaffir lime leaves before serving.
