- Lemongrass, finely chopped2 stalks
- Galangal, grated1 inch piece
- Garlic cloves, minced6 cloves
- Coriander seeds, toasted and ground1 tsp
- Turmeric powder1 tsp
- Salt1.5 tsp
- Black pepper1/2 tsp
- Fish sauce2 tbsp
- Shallots, thinly sliced1 cup
- Rice flour1/4 cup
- Vegetable oil for fryingAs needed

Fry the thinly sliced shallots in hot oil until golden brown and crispy. Remove and drain on paper towels. Reserve the shallot-infused oil.

In a bowl, combine chicken pieces with chopped lemongrass, grated galangal, minced garlic, ground coriander seeds, turmeric powder, salt, black pepper, and fish sauce. Mix well.

Add half of the crispy fried shallots to the marinade and mix. Marinate for at least 30 minutes.

Toss the marinated chicken with rice flour.

Heat the reserved shallot oil (or fresh vegetable oil) in a wok or deep pot over medium-high heat.

Deep-fry the chicken in batches until golden brown and cooked through, about 12-15 minutes.
