  • Fresh ginger, peeled and thinly sliced40g
  • Lemongrass, tough outer layers removed, bruised and cut into 2-inch pieces2 stalks
  • Garlic, minced3 cloves
  • Shallots, minced2
  • Fish sauce4 tbsp
  • Soy sauce2 tbsp
  • Sugar2 tbsp
  • Black pepper1 tsp
  • Water1/2 cup
  • Vegetable oil2 tbsp
  • Fresh cilantro or Thai basil (for garnish)2 tbsp

    Cut chicken thighs into bite-sized pieces. Marinate chicken with 1 tbsp fish sauce, 1 tbsp soy sauce, 1 tsp sugar, and 1/2 tsp black pepper for at least 15 minutes.

    Heat vegetable oil in a pot or Dutch oven over medium-high heat. Add minced garlic and shallots and sauté until fragrant.

    Add the marinated chicken and sear on all sides until lightly browned.

    Add the sliced ginger, lemongrass pieces, remaining fish sauce, remaining soy sauce, remaining sugar, and water. Stir to combine.

    Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the chicken is cooked through and tender, and the sauce has thickened.

    Stir occasionally. Remove lemongrass pieces before serving if desired.

    Season with salt and remaining black pepper to taste.

    Serve hot, garnished with fresh cilantro or Thai basil. Best enjoyed with steamed rice.
