- Lemongrass, bruised2 stalks
- Garlic, smashed4 cloves
- Cracked black pepper1 tbsp
- Salt1 tsp

Prepare the chicken: Cut chicken into bite-sized chunks. Clean and pat dry.

Marinate the chicken: In a bowl, combine chicken chunks with 1 tsp salt, 1 tbsp cracked black pepper, smashed garlic, and the juice of half a lime. Mix well and let marinate for 15 minutes.

Prepare the steamer: Line a steamer basket or heatproof dish with parchment paper. Place bruised lemongrass stalks and lime slices at the bottom.

Steam the chicken: Arrange the marinated chicken pieces over the lemongrass and lime. Cover the steamer tightly. Steam over medium-high heat for 20-25 minutes, or until chicken is cooked through.
