Prepare the seafood: peel and devein shrimp, clean and slice squid into rings. Finely mince garlic and bruise lemongrass stalk.

Heat oil in a cast-iron skillet over medium-high heat. Add garlic and lemongrass, sauté until fragrant.

Add shrimp and squid, cook for 1-2 minutes until just opaque. Add water or broth, fish sauce, and lime juice. Bring to a simmer.

Create two wells in the simmering liquid and crack the eggs into them. Cover the skillet and poach the eggs until the whites are set but yolks are still runny.

Season with salt and pepper to taste.
