Classic Beef Shawarma

Thinly sliced marinated beef, slow-cooked and served in warm pita bread with a variety of fresh toppings and sauces. This is the authentic, traditional way to enjoy shawarma.

Slice the beef chuck roast thinly against the grain. In a large bowl, combine yogurt, lemon juice, olive oil, minced garlic, shawarma spice blend, salt, and pepper. Add the beef slices and toss to coat thoroughly. Marinate for at least 4 hours, or preferably overnight in the refrigerator.

Preheat your oven to 300°F (150°C). If you have a vertical rotisserie, prepare it according to manufacturer instructions. Otherwise, layer the marinated beef tightly onto skewers or a baking sheet, forming a compact block. Cook in the oven for 2-3 hours, or until the beef is tender and cooked through. For rotisserie, cook until browned and cooked through, turning as needed.

Once cooked, let the beef rest for 10-15 minutes. Thinly slice the beef off the block or skewers.

Warm the pita bread on a skillet or in the oven.

To assemble, spread tahini sauce and/or garlic sauce on the warm pita. Fill generously with the sliced beef. Top with diced tomatoes, sliced red onion, pickled turnips, and chopped parsley.
