Pat the chicken pieces dry and season generously with salt and pepper.

Heat olive oil and butter in a large oven-safe skillet or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until golden. Remove chicken and set aside.

Add chopped shallots to the skillet and cook until softened, about 3-4 minutes. Add minced garlic and sliced mushrooms, cook until mushrooms are browned and tender, about 5-7 minutes.

Pour in the white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer and reduce by half.

Stir in the chicken broth, diced tomatoes, and tomato paste. Bring to a simmer.

Return the chicken pieces to the skillet, nestling them into the sauce. Cover and transfer to a preheated oven at 180°C (350°F) or simmer gently on the stovetop.

Braise for 30-40 minutes, or until the chicken is cooked through and tender.
