Thinly slice the ribeye steak against the grain. Slice the onions thinly.

Heat vegetable oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until deeply caramelized, about 15-20 minutes. Remove onions from skillet and set aside.

Add the sliced steak to the same skillet. Season with salt and pepper. Cook, stirring and breaking up the meat, until browned and cooked through, about 5-7 minutes.

Return the caramelized onions to the skillet with the steak. Stir to combine.

Slice the hoagie rolls lengthwise, but not all the way through. Spoon the steak and onion mixture into the rolls.
