- Cooked Jasmine rice (day-old)4 cups
- Garlic5 cloves, minced
- Salted egg yolks3, steamed and mashed
- Green onions3 stalks, chopped
- Fish sauce1 tablespoon
- Sugar1 teaspoon
- Vegetable oil3 tablespoons
- Saltto taste
- Black pepperto taste
- Parsleyfor garnish

Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and stir-fry until fragrant, about 30 seconds.

Add the cooked rice to the wok. Break up any clumps.

Add the mashed salted egg yolks to the wok. Stir-fry, breaking up the yolk further and mixing it with the rice for about 3-4 minutes until the rice is coated and slightly golden.

Stir in the fish sauce, sugar, and chopped green onions. Continue to stir-fry for another 2 minutes.

Season with salt and black pepper to taste. Garnish with fresh parsley before serving.
