Wash and soak basmati rice for 30 minutes.

In a large pot, heat vegetable oil over medium heat. Add chopped onions and sauté until golden brown.

Add chopped tomatoes, Kabsa spice mix, dried limes, salt, and pepper. Cook for 5-7 minutes until tomatoes soften.

Drain the rice and add it to the pot. Stir gently to combine with the chicken and spices.

Pour in chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
