Ingredients
- Pork Ribs (cut into pieces)600g
- Thick Coconut Milk (Kakang Gata)200ml
- Coconut Cream200ml
- Shrimp Paste (Bagoong Alamang)3 tbsp
- Garlic6 cloves
- Ginger1 inch piece
- Green Chilies (Siling Haba)8-10 pcs
- Red Chilies (Siling Labuyo), minced2 pcs
- Cooking Oil
- Water1/2 cup
- Saltto taste
- Black Pepperto taste

Sear the pork ribs in a pot with a little oil until browned on all sides. Remove and set aside.

In the same pot, sauté minced garlic and grated ginger until fragrant.

Add shrimp paste and cook for 1 minute.

Return pork ribs to the pot. Add water and bring to a boil. Simmer for 30 minutes until pork is tender.

Pour in the thick coconut milk and coconut cream. Add whole green chilies and minced red chilies.

Simmer gently, uncovered, for another 15-20 minutes, stirring occasionally, until the sauce is thick and rich.
