Finely grate the onion using a box grater. Squeeze out excess liquid from the grated onion using cheesecloth or your hands.

In a large bowl, combine ground beef, squeezed grated onion, turmeric, salt, pepper, and water. Mix thoroughly with your hands until well combined and slightly sticky. Do not overmix.

Divide the meat mixture into 4-6 equal portions. Wet your hands with cold water and shape each portion around a wide skewer, forming a long, flat patty about 1 inch thick.
